Josper Steak Menu & Prices at Barossa 2.0: Which Cut Should You Order?

Josper Steak Menu at Barossa Steak & Grill Singapore

A Josper steak is a steak cooked in a Josper, an enclosed charcoal oven that grills at very high heat to build a dark crust while keeping the inside juicy. At Barossa 2.0 in VivoCity, every beef, lamb, pork and poultry cut on the "From the Josper" menu is cooked this way, then served with confit garlic, seasonal pickles and a sauce of your choice.

As the new menu puts it, fire is the foundation of flavour: carefully tempered to build char, render fat and lock in moisture. Here is how to choose your cut. New to the oven itself? Read what is a Josper grill.

Which Steak Cut Should You Choose?

  • For the most beefy flavour: Black Angus Ribeye (250g, $42). The marbling melts on the Josper and keeps the meat juicy.

  • For a lean, tender steak: Grain Fed Tenderloin (200g, $43). The softest cut, with a mild flavour.

  • For a classic all-rounder: Black Angus Striploin (220g, $38). Firm bite, good fat cap and the best value on the menu.

  • For rich marbling: Australian Wagyu 6–7 MB Striploin ($36 per 100g). MB 6–7 means a high marble score; order by weight.

  • For something different: Pure Black Angus Coulotte MB 4–5 (200g, $44). The coulotte (top sirloin cap) has a full flavour and a natural fat layer that crisps on the grill.

  • Not in the mood for beef: the Lumina Lamb T-Bone ($46) or the Barossa Pineapple Coquelet with pineapple jalapeño salsa and smoked chilli ($20 half, $40 whole).

What Doneness Does the Chef Recommend?

The chef recommends medium-rare for beef and lamb. You can still ask for your steak from rare to well-done. Here is why medium-rare is our favourite.
